Recipe: Red Velvet Cake Recipe

Make red velvet cake pops. Red velvet cake pops are fun and festive desserts. These bite-size cakes are popular tea party foods. Follow the simple red velvet cake pop recipe below. 


Ingredients and supplies:

1 (18 ounce) box red velvet cake mix
Other ingredients called for by cake mix (usually eggs, oil, and water)
12 ounces cream cheese frosting (3/4 of a can)
2 (24 ounce) packages vanilla candy coating
Food coloring
Sprinkles
Lollipop sticks
Styrofoam block
Wax paper


Directions:

  1. Bake the red velvet cake, following the directions on the package. Set aside to cool. 
  2. Using your hands, crumble the cake and combine with the frosting until it is evenly distributed.
  3. Place the bowl with your mixture into the fridge for at least a half hour to chill.
  4. Roll the cake mixture into small balls, around 1 – 2 inches in size and place on a sheet of wax paper. Return to the fridge while you do the next step.
  5. Follow the directions on the candy coating to melt it. Add food coloring to create the colors of your choice.
  6. Remove the cake balls from the fridge, just a few at a time. Dip a lollipop stick into the candy coating before inserting it to create the cake pop. Then dip the entire pop into the candy coating to cover.
  7. Decorate and stand upright in Styrofoam block to dry.

Recipe: Raspberry Truffle Cake Pops

Makes 48

Ingredients

1 package white cake mix (regular size)
1/2 cup canned vanilla frosting
1/3 cup seedless raspberry jam, melted
2 to 3 tablespoons raspberry liqueur
Red food coloring, optional
48 lollipop sticks
2-1/2 pounds dark chocolate candy coating, chopped
Pink candy coating, chopped
Pink sprinkles and decorative sugar, optional

Directions


  1. Prepare and bake cake mix according to package directions, using a greased 13-in. x 9-in. baking pan. Cool completely on a wire rack. 
  2. Crumble cake into a large bowl. Add the frosting, jam, liqueur and food coloring if desired; mix well. Shape into 1-in. balls. Place on baking sheets; insert sticks. Freeze for at least 2 hours or refrigerate for at least 3 hours or until cake balls are firm. 
  3. In a microwave, melt dark candy coating. Dip each cake pop in coating; allow excess to drip off. Insert cake pops into a styrofoam block to stand. Melt pink candy coating; drizzle over cake pops. Decorate some cake pops with sprinkles and sugar if desired. Let stand until set. Yield: 4 dozen.
