Melt some chopped white chocolate in a glass bowl in the microwave on medium power – it can burn and seize easily. Add a dab of butter if you like to help get things going.
Pick up a pack of Pop Rocks – a package will decorate about a dozen pops if you don’t have little fingers dipping into them.
Poke a wooden or paper lollipop stick into each doughnut hole and dip them in the melted chocolate, rolling them around to coat. You could use dark chocolate instead, but the colourful pop rocks show up so well on white.
Use the lid of a flour shaker to hold them upright – or a wad of play dough works well. Let them stand until they cool and set.
