Recipe: Key Lime Cake Pops

Ingredients:
1 cup canola oil
2 1/2 cups sugar, divided
4 extra-large eggs, room temperature
1/3 cup grated key lime zest
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed (or bottled) key lime juice, divided
3/4 cup buttermilk, room temperature
1 teaspoon pure vanilla sugar, sifted
Directions:
Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/4 by 2 1/2-inch) loaf pans. You may also line the bottom with parchment paper, if desired.
Mix the oil and 2 cups granulated sugar in the bowl of an electric mixer fitted with the paddle attachment. With the mixer on medium speed, add the eggs, 1 at a time, and the key lime zest.
Sift together the flour, baking powder, baking soda, and salt in a bowl. In another bowl, combine 1/4 cup key lime juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
Combine 1/2 cup granulated sugar with 1/2 cup key lime juice in a small saucepan and cook over low heat until the sugar dissolves. When the cakes are done, allow to cool for 10 minutes. Remove the cakes from the pans and set them on a rack set over a tray or sheet pan; spoon the key lime syrup over them. Allow the cakes to cool completely.
Crumble Cake and add 1 1/2 (14-ounce) cans sweetened condensed milk. Mix to combine.
Put on food gloves. Roll the cake mixture into 1" balls and place on a cookie sheet. Insert cake pop sticks into melted white chocolate and insert them into the cake balls. Freeze. Dip cake pops into melted white chocolate and sprinkle with white nonpareils.

The following Tiramisu Cake Pop Recipe is based on Starbucks cake pops.
Ingredients
Vanilla Cake with coffee infused in it
Vanilla Icing
mocha flavored chocolate coating
chocolate coffee bean
Directions
- Line a baking sheet with parchment paper; set aside. Trim about 1/2 inch from the perimeter of the cake. Working in batches, crumble cake into the bowl of a food processor; process until fine crumbs form. Transfer to a large bowl and add frosting; blend together using the back of a spoon, until well combined, 5 to 10 minutes.
- Roll mixture into 1 1/4- to 1 1/2-inch balls; transfer to prepared baking sheet. Cover with parchment-paper-lined aluminum foil. Transfer to refrigerator until chilled, about 2 hours or to a freezer for about 10 minutes.
- Begin to shape into balls. Transfer to a parchment paper-lined baking sheet. Transfer to freezer until chilled, 5 to 10 minutes.
- Meanwhile, melt chocolate in heatproof bowl set over (but not touching) simmering water. Line another baking sheet with parchment paper; set aside. Remove cupcakes from freezer and dip the bottom of each cupcake into the chocolate; transfer, bottom-side up, to prepared baking sheet. To make lollipops, insert a lollipop stick into the bottom of each cupcake. Let chocolate set, 15 to 20 minutes.
- Melt white chocolate in heatproof bowl set over (but not touching) simmering water. Add coffee flavoring to the chocolate or espresso powder, etc. Dip the tops of the cupcakes into the chocolate and place right-side up on prepared baking sheet or stick lollipop sticks into a Styrofoam square. Place a candy-coated chocolate in the center of each and top with sprinkles. Let dry completely.
Recipe: Pop Rocks Cake Pops

Melt some chopped white chocolate in a glass bowl in the microwave on medium power – it can burn and seize easily. Add a dab of butter if you like to help get things going.
Pick up a pack of Pop Rocks – a package will decorate about a dozen pops if you don’t have little fingers dipping into them.
Poke a wooden or paper lollipop stick into each doughnut hole and dip them in the melted chocolate, rolling them around to coat. You could use dark chocolate instead, but the colourful pop rocks show up so well on white.
Use the lid of a flour shaker to hold them upright – or a wad of play dough works well. Let them stand until they cool and set.
